Ingredients

  • 4 bell peppers
  • 1 cup feta cheese, crumbled
  • 1/2 cup cooked quinoa
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix together the feta cheese, cooked quinoa, parsley, red pepper flakes, garlic powder, olive oil, salt, and pepper.
  4. Stuff the mixture into the hollowed-out bell peppers.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
  7. Serve warm and enjoy!

Notes

  • Feel free to adjust the spice level by adding more or less red pepper flakes.
  • These can be made ahead of time and stored in the refrigerator before baking.
