- 1 head of lettuce (such as butter or romaine)
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Juice of 1 lime
Instructions
- In a skillet, heat olive oil over medium heat.
- Add the chickpeas, cumin, paprika, cayenne pepper, salt, and pepper. Cook for about 5-7 minutes until heated through and slightly crispy.
- While the chickpeas are cooking, prepare the lettuce leaves by washing and drying them.
- In a bowl, combine diced tomatoes, red onion, cilantro, and lime juice.
- Once the chickpeas are ready, assemble the wraps by placing a spoonful of chickpeas in each lettuce leaf and topping with the tomato mixture.
