Description
Warm and creamy Spicy Cajun Potato Soup that brings a burst of flavor with every spoonful, perfect for chilly evenings.
Ingredients
Scale
- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions for garnish
- Crumbled bacon (optional)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion, minced garlic, diced bell pepper, and celery. Sauté for about 5 minutes, stirring frequently, until softened and fragrant.
- Toss in the diced potatoes, Cajun seasoning, and smoked paprika. Stir for a minute to release their flavors, then pour in the broth. Bring to a boil, cover, and reduce the heat to simmer for about 20 minutes, or until the potatoes are tender.
- Use an immersion blender to purée the soup until smooth, leaving some chunks for texture.
- Pour in the heavy cream, stirring gently, and heat for an additional 5 minutes, adjusting seasoning as necessary.
- Ladle the soup into bowls and garnish with chopped green onions and crumbled bacon, if desired.
Notes
Flavors deepen overnight, making it perfect for make-ahead meals. You can substitute sweet potatoes for regular potatoes for added sweetness.
