  • 4 slices of whole grain bread
  • 4 large eggs
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Crack each egg into a small bowl and gently slide them into the simmering water.
  4. Poach the eggs for about 3-4 minutes or until the whites are set but the yolks are still runny.
  5. Meanwhile, mash the avocados in a bowl and season with salt, black pepper, and red pepper flakes.
  6. Spread the mashed avocado evenly on the toasted bread.
  7. Once the eggs are done, carefully remove them from the water and place one on top of each avocado toast.
  8. Garnish with fresh cilantro and additional red pepper flakes if desired.
