- 2 ripe avocados
- 4 slices of whole grain bread
- 4 large eggs
- 1 teaspoon red pepper flakes
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Toast the slices of whole grain bread until golden brown.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Crack each egg into a small bowl and gently slide them into the simmering water.
- Poach the eggs for about 3-4 minutes or until the whites are set but the yolks are still runny.
- Meanwhile, mash the avocados in a bowl and season with salt, black pepper, and red pepper flakes.
- Spread the mashed avocado evenly on the toasted bread.
- Once the eggs are done, carefully remove them from the water and place one on top of each avocado toast.
- Garnish with fresh cilantro and additional red pepper flakes if desired.
Notes
- For a creamier texture, add a splash of lemon juice to the mashed avocado.
- Adjust the spice level by adding more or less red pepper flakes.
- This dish can be served as a breakfast or a light lunch.
