Ingredients

Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Add sweet potatoes, cumin, coriander, and cayenne pepper; stir to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until sweet potatoes are tender, about 15 minutes.
- Add chopped kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Blend the soup for a creamy texture, if desired, or leave it chunky.
