  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat eggs and sugar until thick and pale. Stir in pumpkin and vanilla.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
  6. Once baked, remove from the oven and let cool for a few minutes before rolling it up with the parchment paper.
  7. For the filling, beat cream cheese and butter until smooth, then add powdered sugar and vanilla.
  8. Unroll the cooled cake, spread the cream cheese filling evenly, and roll it back up.
  9. Chill in the refrigerator for at least 1 hour before slicing and serving.
