 - 1/4 teaspoon salt
 - 1 cup pumpkin puree
 - 1/2 cup milk
 - 1/4 cup sugar
 - 1 large egg
 - 2 tablespoons melted butter
 
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
 - In another bowl, mix the pumpkin puree, milk, sugar, egg, and melted butter until well combined.
 - Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
 - Heat a non-stick skillet over medium heat and lightly grease it.
 - Pour 1/4 cup of batter onto the skillet for each pancake.
 - Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
 - Serve warm with maple syrup or your favorite toppings.
 
Notes
- For a vegan version, substitute milk with almond milk and use a flax egg instead of a regular egg.
 - These pancakes can be made ahead and frozen for a quick breakfast option.
