Ingredients

  • 1 cup chopped nuts
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup dark rum
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a loaf pan.
  2. In a bowl, mix the dried fruits and nuts with 1 tablespoon of flour to prevent them from sinking.
  3. In another bowl, whisk together the flour, baking powder, spices, and salt.
  4. In a large mixing bowl, cream the butter and brown sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the rum, orange juice, and vanilla extract.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in the floured fruits and nuts.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
  12. For the rum glaze, mix powdered sugar with rum until desired consistency is reached and drizzle over the cooled cake.
