Ingredients

  • 1 medium spaghetti squash
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 pound ground turkey or beef (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside with olive oil, and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  5. While the squash is roasting, cook the ground turkey or beef in a skillet over medium heat until browned. Drain excess fat.
  6. Add marinara sauce and Italian seasoning to the meat, stirring to combine.
  7. In a bowl, mix ricotta cheese with salt, pepper, and half of the Parmesan cheese.
  8. Once the squash is done, use a fork to scrape the flesh into strands.
  9. Combine the spaghetti squash strands with the meat sauce and ricotta mixture.
  10. Fill the squash halves with the mixture and top with mozzarella and remaining Parmesan cheese.
  11. Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  12. Garnish with fresh basil before serving.
