- 1 medium spaghetti squash
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 pound ground turkey or beef (optional)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside with olive oil, and season with salt and pepper.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- While the squash is roasting, cook the ground turkey or beef in a skillet over medium heat until browned. Drain excess fat.
- Add marinara sauce and Italian seasoning to the meat, stirring to combine.
- In a bowl, mix ricotta cheese with salt, pepper, and half of the Parmesan cheese.
- Once the squash is done, use a fork to scrape the flesh into strands.
- Combine the spaghetti squash strands with the meat sauce and ricotta mixture.
- Fill the squash halves with the mixture and top with mozzarella and remaining Parmesan cheese.
- Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
- For a vegetarian option, omit the meat and add more vegetables like spinach or mushrooms.
- Make sure to let the squash cool slightly before handling.
- These can be made ahead of time and reheated before serving.
