- For the Casserole:
- 1 medium spaghetti squash (about 3–4 pounds)
- 1 pound ground turkey
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- For Topping:
- 1/2 cup breadcrumbs (optional)
- 1 tablespoon olive oil (if using breadcrumbs)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
- While the squash is roasting, in a skillet over medium heat, cook the ground turkey until browned, about 7-10 minutes.
- Add garlic powder, onion powder, Italian seasoning, salt, and pepper to the turkey, stirring to combine.
- Once the squash is done, let it cool slightly, then scrape the flesh with a fork to create spaghetti-like strands.
- In a large bowl, combine the spaghetti squash, cooked turkey, ricotta cheese, marinara sauce, and half of the mozzarella and Parmesan cheeses.
- Transfer the mixture to a greased baking dish and top with the remaining mozzarella and Parmesan cheeses. If using, mix breadcrumbs with olive oil and sprinkle on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
