  • For the Casserole:
    • 1 medium spaghetti squash (about 34 pounds)
    • 1 pound ground turkey
    • 1 cup ricotta cheese
    • 1 cup shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 cup marinara sauce
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
  • For Topping:
    • 1/2 cup breadcrumbs (optional)
    • 1 tablespoon olive oil (if using breadcrumbs)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  4. While the squash is roasting, in a skillet over medium heat, cook the ground turkey until browned, about 7-10 minutes.
  5. Add garlic powder, onion powder, Italian seasoning, salt, and pepper to the turkey, stirring to combine.
  6. Once the squash is done, let it cool slightly, then scrape the flesh with a fork to create spaghetti-like strands.
  7. In a large bowl, combine the spaghetti squash, cooked turkey, ricotta cheese, marinara sauce, and half of the mozzarella and Parmesan cheeses.
  8. Transfer the mixture to a greased baking dish and top with the remaining mozzarella and Parmesan cheeses. If using, mix breadcrumbs with olive oil and sprinkle on top.
  9. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Let it cool for a few minutes before serving.
