  • 1 cup quinoa, rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat a little oil over medium heat. Add the onion and garlic, sauté until fragrant.
  2. Add the ground turkey to the skillet, cooking until browned.
  3. Stir in the bell peppers, corn, and black beans, cooking for a few minutes.
  4. Add the quinoa, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for about 20 minutes or until quinoa is cooked and liquid is absorbed.
  6. Fluff with a fork and garnish with fresh cilantro before serving.
