Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, sliced
  • 1 jalapeño, sliced
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil (for sautéing)
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½1 Tbsp chipotle peppers in adobo (to taste)
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water (as needed)
  • ¼ tsp salt (for sauce)

Instructions

  1. Marinate the chicken: Combine diced chicken with lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle in a bowl. Allow it to marinate for at least 15 minutes.
  2. Cook the rice: While the chicken marinates, prepare the rice according to the package instructions.
  3. Sauté the chicken: Heat a skillet over medium heat, add the marinated chicken, and cook for 12–15 minutes.
  4. Sauté the veggies: In the same skillet, add a teaspoon of olive oil, then sauté red bell pepper, onion, jalapeño until tender. Add minced garlic and cooked chicken back into the pan.
  5. Assemble the wraps: Lay a tortilla flat, layer in rice, chicken mixture, black beans, corn, cotija cheese, and sauce.
  6. Roll it tightly: Fold the sides of the tortilla in and roll from the bottom tightly like a burrito.
  7. Serve immediately: Enjoy your Southwest Chicken Wraps!
