Ingredients

  • 1 cup sourdough discard
  • 2 1/2 cups all-purpose flour
  • 1/4 cup warm water
  • 2 tablespoons sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 egg (optional, for egg wash)

Instructions

  1. Activate the yeast: In a mixing bowl, combine the warm water, sugar, and yeast. Allow it to sit for 5-10 minutes until frothy.
  2. Combine the ingredients: Stir together the sourdough discard, yeast mixture, flour, salt, and olive oil until a shaggy dough forms.
  3. Knead the dough: Transfer the mixture to a lightly floured surface and knead for about 5 minutes until smooth.
  4. Shape the buns: Divide into 8 equal pieces and shape each into a smooth ball.
  5. Let them rise: Place on a baking sheet lined with parchment paper, cover, and let them rise for 30 minutes.
  6. Preheat the oven to 375°F (190°C).
  7. Optional egg wash: Brush the tops of the buns with an egg wash if desired.
  8. Bake to perfection: Bake for 15-20 minutes until golden brown and sound hollow when tapped.
  9. Cool and enjoy: Let cool slightly on a wire rack before serving.

Notes

You can prepare the dough in advance and refrigerate it. An air fryer works well if you don’t have an oven.
