Ingredients

- 2 cups sourdough discard
- 1 cup warm water
- 2 tablespoons sugar
- 2 teaspoons salt
- 4 cups all-purpose flour
- 1/4 cup baking soda
- Coarse salt for sprinkling
Instructions
- Combine the sourdough discard, warm water, sugar, and salt in a large mixing bowl until well blended.
- Mix in the flour gradually until a shaggy dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Rise the dough in a greased bowl covered with a damp cloth for 30-60 minutes.
- Preheat your oven to 450°F (230°C).
- Prepare boiling water by bringing at least 6 cups of water to a rolling boil and adding baking soda.
- Shape the risen dough into bite-sized pieces or classic pretzel forms.
- Boil each bite in the baking soda water for about 30 seconds.
- Prepare a greased baking sheet lined with parchment paper and sprinkle with coarse salt.
- Bake for 10-12 minutes or until golden brown.
- Serve warm with cheese sauce or mustard.
Notes
For best results, use room-temperature ingredients and avoid excess flour during kneading.
