- 3–4 lbs beef roast
- 1 cup red wine vinegar
- 1 cup beef broth
- 1 onion, sliced
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 tablespoon mustard
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 bay leaves
- 1 tablespoon vegetable oil
Instructions
- In a bowl, mix red wine vinegar, beef broth, onion, carrots, garlic, brown sugar, mustard, black pepper, salt, and bay leaves.
- Heat vegetable oil in a skillet over medium-high heat and sear the beef roast on all sides until browned.
- Place the seared beef roast in the slow cooker and pour the marinade over it.
- Cover and cook on low for 8-10 hours or until the beef is tender.
- Remove the beef, slice it, and serve with the gravy from the slow cooker.
