- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup heavy cream
- Fresh parsley, chopped, for garnish
Instructions
- Place chicken breasts at the bottom of the slow cooker. Season with salt, pepper, thyme, and paprika.
- In a mixing bowl, whisk together the cream of chicken soup, chicken broth, chopped onion, and minced garlic. Pour over chicken.
- Add rice and frozen mixed vegetables on top of the chicken and sauce, spreading evenly without stirring.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and shred using two forks, then return to the pot.
- Stir in heavy cream until well blended.
- Serve hot, garnished with fresh parsley.
Notes
For a lighter version, substitute heavy cream with yogurt. To customize, add red pepper flakes for heat or almonds for crunch.
