Slow Cooker Creamy Chicken and Rice

Description

A comforting dish featuring tender chicken, flavorful rice, and a medley of vegetables, all enveloped in a creamy sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place chicken breasts at the bottom of the slow cooker. Season with salt, pepper, thyme, and paprika.
  2. In a mixing bowl, whisk together the cream of chicken soup, chicken broth, chopped onion, and minced garlic. Pour over chicken.
  3. Add rice and frozen mixed vegetables on top of the chicken and sauce, spreading evenly without stirring.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Remove chicken and shred using two forks, then return to the pot.
  6. Stir in heavy cream until well blended.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, substitute heavy cream with yogurt. To customize, add red pepper flakes for heat or almonds for crunch.
