- 1 lb Ground Beef (or Ground Turkey)
- 1 Can Black Beans (Drained and Rinsed)
- 1 Can Diced Tomatoes
- 2 Cups Frozen Mixed Vegetables (or Fresh Veggies)
- 3 Cups Diced Potatoes (Fresh or Frozen)
- 1 Cup Shredded Cheese (Cheddar or Your Choice)
- 1 Onion (Chopped)
- 1 Packet Taco Seasoning
- Salt and Pepper to Taste
Instructions
- In a skillet, over medium heat, brown the ground beef and chopped onion together until cooked through. Drain any excess fat.
- In your slow cooker, combine the browned beef, black beans, diced tomatoes, frozen vegetables, potatoes, taco seasoning, salt, and pepper. Stir everything together until well mixed.
- Cover the slow cooker and set it to low heat; let it cook for 6-8 hours, or use high heat for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheese on top and cover until it melts.
- Serve warm and enjoy!

Make-ahead tips: Prepare the casserole the night before. Cook in oven at 350°F for about 45 minutes if short on time.
