Description

A hearty and comforting casserole made with ground beef, black beans, and mixed vegetables, all slow-cooked to perfection.


Ingredients

  • 1 lb Ground Beef (or Ground Turkey)
  • 1 Can Black Beans (Drained and Rinsed)
  • 1 Can Diced Tomatoes
  • 2 Cups Frozen Mixed Vegetables (or Fresh Veggies)
  • 3 Cups Diced Potatoes (Fresh or Frozen)
  • 1 Cup Shredded Cheese (Cheddar or Your Choice)
  • 1 Onion (Chopped)
  • 1 Packet Taco Seasoning
  • Salt and Pepper to Taste

Instructions

  1. In a skillet, over medium heat, brown the ground beef and chopped onion together until cooked through. Drain any excess fat.
  2. In your slow cooker, combine the browned beef, black beans, diced tomatoes, frozen vegetables, potatoes, taco seasoning, salt, and pepper. Stir everything together until well mixed.
  3. Cover the slow cooker and set it to low heat; let it cook for 6-8 hours, or use high heat for 3-4 hours.
  4. About 30 minutes before serving, sprinkle the shredded cheese on top and cover until it melts.
  5. Serve warm and enjoy!

Notes

Make-ahead tips: Prepare the casserole the night before. Cook in oven at 350°F for about 45 minutes if short on time.
