Description
A comforting bowl of slow-cooked beef ramen with tender chunks of beef, aromatic broth, and chewy noodles, topped with fresh spinach and optional soft-boiled eggs.

- 1.5 pounds beef chuck roast, cut into chunks
- Salt and freshly ground black pepper, to taste
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups beef broth (low-sodium recommended)
- 3 cups water
- 1/4 cup soy sauce (low-sodium if preferred)
- 2 tablespoons sesame oil
- 2 tablespoons brown sugar
- 2 packs fresh ramen noodles (or about 7–8 oz egg noodles)
- 1 cup baby spinach
- 2 green onions, sliced
- Soft-boiled eggs (optional, 1 per serving)
- Sriracha or chili oil (optional, to taste)
Instructions
- Season the beef generously with salt and black pepper on all sides.
- Place the seasoned beef in the slow cooker and top with sliced onion, minced garlic, and grated ginger.
- Pour in the beef broth and water, then add soy sauce, sesame oil, and brown sugar; stir gently to combine.
- Cover and cook on low for 8 hours or on high for 4 hours, checking for fork-tender beef halfway through.
- About 10 minutes before serving, boil salted water in a large pot and cook the ramen noodles according to package instructions.
- Shred the beef in the slow cooker with two forks, mixing it with the cooking liquid.
- Stir in baby spinach and wilt for 2–3 minutes.
- Divide the cooked noodles into bowls, ladle shredded beef and broth over the noodles, and garnish with green onions and soft-boiled eggs if using. Add sriracha or chili oil to taste.
Notes
For enhanced flavor, prepare the beef in advance and store it in the broth overnight. You can also adapt this recipe for a pressure cooker or Dutch oven.
