A refreshing twist on a classic Italian dish, this Skinny Shrimp Scampi features tender zucchini noodles and savory shrimp in a luscious garlic lemon sauce.

- 1 pound large shrimp, peeled and deveined
- 4 medium zucchini, spiralized into noodles
- 2 cups baby spinach (optional)
- 2 tablespoons chopped fresh parsley
- 1/2 cup cherry tomatoes, halved (optional)
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Zest of 1 lemon and juice of 1 large lemon
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter (optional)
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Pat the shrimp dry with paper towels and season lightly with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and cook the shrimp for 1 to 2 minutes per side until they turn pink and opaque. Transfer to a plate to keep warm.
- Lower the heat to medium, add remaining olive oil and butter to the skillet, and sauté minced garlic and red pepper flakes for about 1 minute.
- Add spiralized zucchini noodles and cook for 2 to 3 minutes until tender but still crisp.
- Add lemon zest, lemon juice, and cherry tomatoes (if using), and stir gently to combine.
- Return cooked shrimp to the skillet along with any juices and toss in baby spinach, stirring until wilted.
- Remove from heat, fold in parsley, and adjust seasoning with salt and pepper.
- Serve immediately, optionally topping with grated Parmesan cheese.
Notes
For a dairy-free version, skip the butter and cheese while using extra olive oil. Prepare zucchini noodles a day in advance and keep in an airtight container with a paper towel to absorb moisture.
