Ingredients
- Chicken breasts – 2 lbs
- Bell peppers – 2, sliced
- Onion – 1, chopped
- Garlic – 4 cloves, minced
- Black beans – 1 can, drained and rinsed
- Corn – 1 cup, frozen or fresh
- Tomato sauce – 1 cup
- Chili powder – 2 tsp
- Cumin – 1 tsp
- Salt – to taste
- Pepper – to taste
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add sliced bell peppers, chopped onion, and minced garlic on top of the chicken.
- Stir in black beans, corn, tomato sauce, chili powder, cumin, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve warm with your choice of toppings.
Notes
- Feel free to add other vegetables like zucchini or carrots.
- This recipe can be served over rice or in tortillas.
- Leftovers can be stored in the refrigerator for up to 3 days.
