Ingredients

  • Pasta: 8 oz linguine or spaghetti
  • Shrimp: 1 lb large shrimp, peeled and deveined
  • Butter: 4 tbsp unsalted butter
  • Olive Oil: 2 tbsp extra virgin olive oil
  • Garlic: 4 cloves, minced
  • Lemon: Juice and zest of 1 lemon
  • Parsley: 1/4 cup fresh parsley, chopped
  • Red Pepper Flakes: 1/2 tsp (optional)
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat until melted.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
  4. Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
  5. Stir in the lemon juice and zest, then add the remaining butter, allowing it to melt and combine with the sauce.
  6. Drain the pasta, reserving 1/2 cup of the pasta water. Add the pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
