Ingredients
- Pasta: 8 oz linguine or spaghetti
- Shrimp: 1 lb large shrimp, peeled and deveined
- Butter: 4 tbsp unsalted butter
- Olive Oil: 2 tbsp extra virgin olive oil
- Garlic: 4 cloves, minced
- Lemon: Juice and zest of 1 lemon
- Parsley: 1/4 cup fresh parsley, chopped
- Red Pepper Flakes: 1/2 tsp (optional)
- Salt: to taste
- Pepper: to taste
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat until melted.
- Add the minced garlic and red pepper flakes (if using) to the skillet, sautéing for about 1-2 minutes until fragrant but not browned.
- Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
- Stir in the lemon juice and zest, then add the remaining butter, allowing it to melt and combine with the sauce.
- Drain the pasta, reserving 1/2 cup of the pasta water. Add the pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
Notes
- This dish can be made ahead by preparing the sauce and shrimp, then reheating before serving. Cook the pasta fresh for the best texture.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
