Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: Start by heating sesame oil in a large skillet over medium-high heat until it shimmers.
  2. Cook the shrimp: Add the shrimp to the skillet, letting them sizzle to rosy pink, about 3-4 minutes. Remove and set aside.
  3. Sauté the vegetables: Toss in mixed vegetables and sauté them until they soften and brighten, around 2-3 minutes.
  4. Scramble the eggs: Push the vegetables to one side, pour in the beaten eggs, let them cook briefly before scrambling until fluffy.
  5. Combine elements: Return the shrimp, add cold rice, soy sauce, and oyster sauce. Stir well and heat through completely.
  6. Finish up: Season with salt and pepper, then sprinkle green onions on top before serving.

Notes

For the best results, use chilled, day-old rice to prevent clumping. Customize with your favorite proteins or vegetables.
