Ingredients

- 1 cup fresh corn kernels
- 1 cup cooked shrimp, chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup green onions, chopped
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 large egg
- 1/4 cup milk
- Oil for frying
Instructions
- In a large bowl, combine corn, shrimp, flour, cornmeal, green onions, baking powder, salt, black pepper, and cayenne pepper.
- In a separate bowl, whisk together the egg and milk.
- Pour the egg mixture into the dry ingredients and mix until just combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
- Remove fritters and drain on paper towels.
- Serve warm with remoulade sauce.
Notes
- For a spicier kick, add more cayenne pepper.
- These fritters can be made ahead of time and reheated in the oven.
- Serve with a side salad for a complete meal.
