- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 red onion, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, oregano, salt, and pepper.
- Place chicken breasts on a sheet pan and pour the balsamic mixture over them.
- Add broccoli, cherry tomatoes, and red onion to the pan.
- Toss the vegetables in the balsamic mixture to coat.
- Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
- Let it rest for a few minutes before serving.
