Ingredients

  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) crushed tomatoes
  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and red bell pepper, and sauté until softened.
  3. Stir in the minced garlic, cumin, and paprika, cooking for another minute.
  4. Add the crushed tomatoes, season with salt and pepper, and simmer for 10 minutes.
  5. Make small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Sprinkle crumbled feta cheese on top and garnish with fresh parsley before serving.
