- 1 cup diced leg ham
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 cup grated cheese (optional)
Instructions
- Preheat the oven to 180°C (350°F) and line muffin tin with paper cases.
- Combine the flour, baking powder, salt, and pepper in a mixing bowl.
- Whisk together milk, oil, and eggs in another bowl.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- Fold in the corn and diced ham, adding cheese if desired.
- Spoon the batter into the muffin cases, filling them about two-thirds full.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Cool slightly before transferring to a wire rack and serve warm.
Notes
