Ingredients

  • 1 cup corn kernels (fresh or canned)
  • 1 cup diced leg ham
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and line muffin tin with paper cases.
  2. Combine the flour, baking powder, salt, and pepper in a mixing bowl.
  3. Whisk together milk, oil, and eggs in another bowl.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Fold in the corn and diced ham, adding cheese if desired.
  6. Spoon the batter into the muffin cases, filling them about two-thirds full.
  7. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  8. Cool slightly before transferring to a wire rack and serve warm.

Notes

These muffins can be made a day in advance and stored at room temperature. Use frozen corn if fresh is unavailable.
