Description

Sausage Stuffed Sweet Mini Peppers are a delightful combination of juicy, tender peppers filled with a creamy, savory sausage mixture. Each bite offers a burst of flavor, with the sweetness of the peppers perfectly balancing the richness of the filling.

Ingredients

Scale
  • For the Filling:
    • 1 pound Italian sausage, casings removed
    • 1 cup cream cheese, softened
    • 1/2 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
  • For the Peppers:
    • 12 sweet mini peppers, halved and seeds removed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the Italian sausage until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Once cooked, drain excess fat and add minced garlic, cooking for an additional 1-2 minutes until fragrant.
  4. In a mixing bowl, combine the cooked sausage, cream cheese, mozzarella, Parmesan, Italian seasoning, salt, and pepper until well blended.
  5. Stuff each halved mini pepper with the sausage mixture, pressing down gently to pack it in.
  6. Arrange the stuffed peppers on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the filling is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Make-ahead: You can prepare the filling a day in advance and store it in the refrigerator. Stuff the peppers just before baking.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Substitutions: Use turkey sausage for a lighter option or swap cream cheese for a dairy-free alternative.
