A healthy and delicious twist on the classic Samoa cookie, packed with protein and the flavors of chocolate, coconut, and caramel.
Ingredients

- 1 cup oats
- 1/2 cup shredded coconut
- 1/2 cup chocolate protein powder
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1/4 cup dark chocolate chips
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Combine 1 cup oats, 1/2 cup shredded coconut, 1/2 cup chocolate protein powder, and a pinch of salt in a large mixing bowl.
- Whisk together 1/4 cup honey (or maple syrup), 1/4 cup almond (or peanut) butter, and 1 tsp vanilla extract in another bowl until smooth.
- Pour the wet mixture into the dry ingredients, stirring gently until combined.
- Fold in 1/4 cup dark chocolate chips.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the protein balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to set.
Notes
Prepping these protein balls ahead of time simplifies busy weeks. They last up to a week in the fridge or three months in the freezer.
