Description

A healthy and delicious twist on the classic Samoa cookie, packed with protein and the flavors of chocolate, coconut, and caramel.


Ingredients

  • 1 cup oats
  • 1/2 cup shredded coconut
  • 1/2 cup chocolate protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Combine 1 cup oats, 1/2 cup shredded coconut, 1/2 cup chocolate protein powder, and a pinch of salt in a large mixing bowl.
  2. Whisk together 1/4 cup honey (or maple syrup), 1/4 cup almond (or peanut) butter, and 1 tsp vanilla extract in another bowl until smooth.
  3. Pour the wet mixture into the dry ingredients, stirring gently until combined.
  4. Fold in 1/4 cup dark chocolate chips.
  5. Roll the mixture into small balls, about 1 inch in diameter.
  6. Place the protein balls on a baking sheet lined with parchment paper.
  7. Refrigerate for at least 30 minutes to set.

Notes
