Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chopped spinach, feta cheese, minced garlic, olive oil, salt, pepper, and oregano.
  3. Place a chicken breast on a flat surface and pound it to an even thickness.
  4. Spread a portion of the spinach and feta mixture over the chicken breast.
  5. Roll the chicken breast tightly and secure it with toothpicks.
  6. Repeat with the remaining chicken breasts.
  7. Place the rolled chicken in a baking dish and bake for 25-30 minutes or until cooked through.
  8. Remove from the oven, let it rest for a few minutes, then slice and serve.
