- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the chopped spinach, feta cheese, minced garlic, olive oil, salt, pepper, and oregano.
- Place a chicken breast on a flat surface and pound it to an even thickness.
- Spread a portion of the spinach and feta mixture over the chicken breast.
- Roll the chicken breast tightly and secure it with toothpicks.
- Repeat with the remaining chicken breasts.
- Place the rolled chicken in a baking dish and bake for 25-30 minutes or until cooked through.
- Remove from the oven, let it rest for a few minutes, then slice and serve.
Notes
- For added flavor, marinate the chicken in olive oil and herbs for a few hours before rolling.
- Serve with a side of roasted vegetables or a fresh salad.
