- 1 lb Brussels sprouts, trimmed and halved
- 4 slices of bacon, chopped
- 1/2 cup dried cranberries
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet in a single layer.
- Scatter the chopped bacon over the Brussels sprouts.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the sprouts are tender and the bacon is crispy.
- Remove from the oven and stir in the dried cranberries.
- Serve warm and enjoy!
Notes
- For extra flavor, add minced garlic before roasting.
- Can be made ahead and reheated in the oven.
