			- 4 medium beets, roasted and peeled
 - 4 oz goat cheese, crumbled
 - 1 cup walnuts, toasted
 - 4 cups mixed greens
 - 1/4 cup balsamic vinaigrette
 - Salt and pepper to taste
 
Instructions
- Preheat the oven to 400°F (200°C).
 - Wrap the beets in aluminum foil and roast for about 45-60 minutes until tender.
 - Once cooled, peel the beets and slice them into wedges.
 - In a large bowl, combine the mixed greens, roasted beets, and walnuts.
 - Drizzle with balsamic vinaigrette and toss gently to combine.
 - Top with crumbled goat cheese and season with salt and pepper to taste.
 - Serve immediately and enjoy!
