- 1/2 cup roasted beets, sliced
- 1/4 cup goat cheese, crumbled
- 1 tablespoon butter
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer the roasted beets and goat cheese.
- Season with salt and pepper.
- Top with the second slice of bread, buttered side up.
- Cook in the skillet for 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from heat, slice, and serve warm.
