Ingredients

  • 1 acorn squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. Brush the inside of the squash with olive oil and season with salt and pepper.
  4. Place the squash halves cut-side down on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until tender.
  6. In a small saucepan, melt the butter over low heat.
  7. Add the chopped herbs to the melted butter and stir to combine.
  8. Once the squash is done roasting, remove it from the oven and flip it over.
  9. Drizzle the herb butter over the roasted squash.
  10. Serve warm and enjoy!

  • For added sweetness, you can sprinkle brown sugar on the squash before roasting.
