A delicious and flavorful dish featuring roasted acorn squash topped with a savory herb butter.
Ingredients

- 1 acorn squash
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 tablespoons unsalted butter
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squash in half and scoop out the seeds.
- Brush the inside of the squash with olive oil and season with salt and pepper.
- Place the squash halves cut-side down on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender.
- In a small saucepan, melt the butter over low heat.
- Add the chopped herbs to the melted butter and stir to combine.
- Once the squash is done roasting, remove it from the oven and flip it over.
- Drizzle the herb butter over the roasted squash.
- Serve warm and enjoy!
Notes
- For added sweetness, you can sprinkle brown sugar on the squash before roasting.
- This dish pairs well with grilled meats or as a side for Thanksgiving dinner.
