Description

These Ricotta Cannoli Stuffed Cookies are a delightful fusion of soft, chewy cookies filled with a creamy, sweet ricotta mixture. Each bite offers a perfect balance of rich flavors and a hint of citrus zest, complemented by the crunch of mini chocolate chips.

Ingredients

Scale
  • For the Cookies:
    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
  • For the Filling:
    • 1 cup ricotta cheese, drained
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon cinnamon
    • 1/4 cup mini chocolate chips
    • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop, drop dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. While cookies cool, prepare the filling by mixing ricotta, powdered sugar, vanilla, cinnamon, chocolate chips, and orange zest in a bowl until smooth.
  9. Once cookies are completely cool, spread or pipe the ricotta filling onto the flat side of one cookie and sandwich with another cookie.
