- 1 cup ricotta cheese, drained
- 1/2 cup powdered sugar

- 1/4 teaspoon cinnamon
- 1/4 cup mini chocolate chips
- Zest of 1 orange
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a cookie scoop, drop dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- While cookies cool, prepare the filling by mixing ricotta, powdered sugar, vanilla, cinnamon, chocolate chips, and orange zest in a bowl until smooth.
- Once cookies are completely cool, spread or pipe the ricotta filling onto the flat side of one cookie and sandwich with another cookie.
