- 1 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup canola oil
- 1/3 cup buttermilk
- 2 tablespoons natural cocoa powder
- 2 teaspoons red liquid food coloring
- 4 ounces cream cheese (softened)
- For the crumb topping:
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter (diced)
Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin pan.
- In a medium bowl, mix together the sugar and flour for the crumb topping. Add the diced butter and blend until the mixture resembles coarse crumbs.
- In another bowl, beat together the softened cream cheese, 2 tablespoons of sugar, and vanilla extract until smooth.
- In a large bowl, whisk together the flour, remaining sugar, baking powder, cocoa powder, and salt.
- In a separate bowl, whisk together the egg, canola oil, buttermilk, red food coloring, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the cream cheese mixture.
- Spoon the batter into the muffin pan, filling each cup about two-thirds full and topping with the crumb mixture.
- Bake for 17 to 19 minutes until a toothpick comes out clean.
- Allow to cool for 5 minutes in the pan before transferring to a wire rack.
Notes
For best results, do not overmix the batter. Consider adding chocolate chips or nuts for variety.
