Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup canola oil
  • 1/3 cup buttermilk
  • 2 tablespoons natural cocoa powder
  • 2 teaspoons red liquid food coloring
  • 4 ounces cream cheese (softened)
  • For the crumb topping:
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter (diced)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin pan.
  2. In a medium bowl, mix together the sugar and flour for the crumb topping. Add the diced butter and blend until the mixture resembles coarse crumbs.
  3. In another bowl, beat together the softened cream cheese, 2 tablespoons of sugar, and vanilla extract until smooth.
  4. In a large bowl, whisk together the flour, remaining sugar, baking powder, cocoa powder, and salt.
  5. In a separate bowl, whisk together the egg, canola oil, buttermilk, red food coloring, and vanilla extract.
  6. Gently fold the wet ingredients into the dry ingredients until just combined. Fold in the cream cheese mixture.
  7. Spoon the batter into the muffin pan, filling each cup about two-thirds full and topping with the crumb mixture.
  8. Bake for 17 to 19 minutes until a toothpick comes out clean.
  9. Allow to cool for 5 minutes in the pan before transferring to a wire rack.

Notes

For best results, do not overmix the batter. Consider adding chocolate chips or nuts for variety.
