A quick and easy casserole made with rotisserie chicken and zucchini, perfect for busy weeknight dinners.
Ingredients

- 2 cups rotisserie chicken, shredded
- 2 medium zucchinis, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cooked rice
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 can cream of chicken soup
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded rotisserie chicken, sliced zucchini, cooked rice, diced onion, diced bell pepper, cream of chicken soup, garlic powder, salt, and pepper.
- Mix well until all ingredients are evenly combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle the shredded cheese on top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like spinach or mushrooms.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
