Description

A vibrant slaw with crunchy purple cabbage, sweet mango, and tangy cranberries, perfect for picnics and gatherings.

Ingredients

Scale
  • 2 cups purple cabbage, shredded
  • 1 cup mango, diced
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine 2 cups of shredded purple cabbage, 1 cup of diced mango, 1/2 cup of dried cranberries, and 1/4 cup of thinly sliced red onion. Toss these colorful ingredients together.
  2. In a separate small bowl, whisk together 1/4 cup of apple cider vinegar, 2 tablespoons of olive oil, 1 tablespoon of honey, and salt and pepper to taste.
  3. Pour the dressing over the cabbage mixture, ensuring it drapes each piece evenly. Toss gently to coat.
  4. Let your slaw sit for about 10 minutes before serving to allow the flavors to marinate.

Notes

For best flavor, let the slaw chill for half an hour before serving. Keeps well in the refrigerator for 2-3 days.
