- 2 chicken breasts
- 1 cup pumpkin puree
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the pumpkin puree, chopped spinach, cream cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the pumpkin and spinach mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Let rest for a few minutes before slicing and serving.
