Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Add pumpkin puree, sugar, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until well combined.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Bake for 30-35 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.

  • For a stronger pumpkin flavor, use homemade pumpkin puree.
  • These bars can be topped with whipped cream or caramel sauce before serving.
