 - 1/4 cup brown sugar
 - 1/4 cup warm water
 - 1 tablespoon pumpkin spice
 - 1 teaspoon salt
 - 1 packet active dry yeast
 - 1 egg (for egg wash)
 
Instructions
- In a bowl, combine warm water and yeast, let it sit for 5 minutes.
 - In a large mixing bowl, combine flour, pumpkin puree, brown sugar, pumpkin spice, and salt.
 - Add the yeast mixture to the dry ingredients and mix until a dough forms.
 - Knead the dough for about 5-7 minutes until smooth.
 - Let the dough rise in a warm place for 1 hour or until doubled in size.
 - Preheat the oven to 375°F (190°C).
 - Divide the dough into equal pieces and shape them into bagels.
 - Boil a pot of water and gently place the bagels in for 1-2 minutes on each side.
 - Place the bagels on a baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
 
Notes
- For a sweeter bagel, add more brown sugar.
 - Store in an airtight container for up to 3 days.
 - These bagels can be frozen for longer storage.
