Pumpkin Deviled Eggs are a festive and spooky twist on the classic deviled eggs, perfect for Halloween gatherings.

- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup canned pumpkin puree
- 1/2 teaspoon pumpkin pie spice
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, then covering and letting sit for 12 minutes.
- Cool the eggs in ice water, then peel and slice them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Add mayonnaise, Dijon mustard, pumpkin puree, pumpkin pie spice, salt, and pepper to the yolks and mix until smooth.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Garnish with chopped chives before serving.
Notes
- For a spicier kick, add a dash of hot sauce to the yolk mixture.
- These can be made a day in advance and stored in the refrigerator.
- Adjust the pumpkin pie spice according to your taste preference.
