Ingredients
- Pumpkin: 2 cups pureed pumpkin (canned or fresh, cooked and mashed)
- Cranberries: 1 cup fresh or frozen cranberries
- Heavy Cream: 1 cup
- Eggs: 2 large eggs
- Brown Sugar: 1/4 cup
- Nutmeg: 1/2 teaspoon, freshly grated
- Cinnamon: 1 teaspoon
- Salt: 1/2 teaspoon
- Breadcrumbs: 1/2 cup, for topping
- Butter: 2 tablespoons, melted, for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the pureed pumpkin, heavy cream, eggs, brown sugar, nutmeg, cinnamon, and salt. Whisk until smooth.
- Fold in the cranberries gently to distribute them evenly throughout the mixture.
- Pour the pumpkin and cranberry mixture into a greased 9×9 inch baking dish.
- In a separate bowl, mix the breadcrumbs with melted butter until well combined. Sprinkle this mixture evenly over the top of the gratin.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the edges are bubbling.
- Remove from the oven and let it cool for 10 minutes before serving.
Notes
