Ingredients

  • 8 oz wide Lo Mein noodles (cooked and rinsed)
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix

Instructions

  1. Cook the Noodles: Bring a large pot of water to a boil, add the Lo Mein noodles, and cook for about 4-5 minutes. Drain and rinse with cold water.
  2. Brown the Pork: Heat peanut oil in a skillet over medium-high heat. Add ground pork and cook for 5-7 minutes until browned, adding 1/4 cup green onions in the last minute.
  3. Whisk the Sauce: In a bowl, combine chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha; whisk until blended.
  4. Toss It All Together: Add the cooked noodles and coleslaw to the skillet with pork. Pour the sauce over and toss gently for 2-3 minutes.
  5. Serve and Garnish: Dish into bowls and top with remaining green onions.

Notes

Make sauce a day in advance and store in the refrigerator. For crispier pork, consider using an air fryer.
