Description

- 1 lb pork tenderloin, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden skewers, soaked in water
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add the pork cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated pork onto the soaked skewers.
- Grill the skewers for 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
- Serve hot with tzatziki sauce and fresh vegetables.
Notes
- For extra flavor, add bell peppers and onions to the skewers.
- Serve with pita bread for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
