Description

These Pineapple Upside Sugar Cookies are a delightful twist on the classic treat, featuring a soft, chewy texture that melts in your mouth. The sweet, tangy flavor of pineapple combined with a creamy frosting creates a tropical experience that is both refreshing and indulgent.

Ingredients

Scale
  • For the Cookies:
    • 2 1/2 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 cup unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 1 cup crushed pineapple, drained
  • For the Frosting:
    • 1/2 cup unsalted butter, softened
    • 2 cups powdered sugar
    • 2 tbsp heavy cream
    • 1 tsp vanilla extract
    • 1/4 cup crushed pineapple, drained

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the crushed pineapple gently.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. The centers may look slightly underbaked; this is normal.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. While the cookies cool, prepare the frosting by beating together the softened butter, powdered sugar, heavy cream, vanilla extract, and crushed pineapple until smooth and creamy.
  11. Once the cookies are completely cool, frost them generously with the pineapple frosting.
