Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat until gently shimmering.
  2. Add chopped onion and minced garlic, stirring until fragrant and translucent—about 2-3 minutes.
  3. Add diced chicken to the pan; cook, stirring frequently, until browned and cooked through, about 5-7 minutes.
  4. Fold in the diced pineapple and chopped peanuts, warming them for about 2 minutes.
  5. Stir the cooked rice into the skillet, then add the soy sauce and combine evenly.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes to heat through and allow flavors to meld.
  8. Remove from heat, top with fresh green onions, and serve.
