- 2 cups fresh peaches, sliced
- 1 cup fresh raspberries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 pie crust (store-bought or homemade)
- 1 tablespoon butter, cut into small pieces
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine sliced peaches, raspberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Mix well.
- Pour the fruit mixture into the pie crust and dot with butter.
- Cover with a second pie crust or create a lattice top. Seal the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly.
- Let cool before serving.
