Description

A delightful make-ahead breakfast treat featuring buttery brioche soaked in custard, layered with juicy peaches and topped with a crumbly cinnamon topping.


Ingredients

  • 1 loaf brioche or challah bread, cubed (about 8 cups)
  • 4 large eggs
  • 360 ml whole milk
  • 120 ml heavy cream
  • 100 g granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • 3 cups fresh or frozen peach slices (peeled if fresh)
  • 50 g brown sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp cinnamon
  • 60 g all-purpose flour
  • 50 g brown sugar
  • ½ tsp cinnamon
  • Pinch of salt
  • 60 g unsalted butter, cold and cubed
  • Powdered sugar or maple syrup (for serving)
  • Optional: whipped cream or vanilla ice cream

Instructions

  1. Grease your 9×13-inch baking dish with butter or cooking spray. Spread the cubed bread evenly across the bottom of the dish.
  2. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until well combined. Pour this mixture over the cubed bread.
  3. In a separate bowl, toss the peach slices with brown sugar, cornstarch, lemon juice, and cinnamon. Distribute the peach mixture over the soaked bread cubes.
  4. In a medium bowl, mix together flour, brown sugar, cinnamon, and salt. Cut in the cold butter until crumbly and sprinkle over the peach layer.
  5. Cover with plastic wrap and refrigerate overnight.
  6. Preheat your oven to 175°C (350°F). Bake uncovered for 40-45 minutes until golden brown.
  7. Let it cool for about 10 minutes before serving. Dust with powdered sugar or serve with maple syrup or whipped cream.

Notes

For optimal flavor, refrigerate overnight. Day-old bread works best for soaking the custard.
