- 1 cup uncooked rice
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup salsa
- 1 cup shredded cheese
- Chopped cilantro for garnish
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the taco seasoning and mix well.
- Stir in the rice, black beans, corn, beef broth, and salsa.
- Bring to a boil, then reduce heat and cover.
- Simmer for about 20 minutes or until the rice is cooked.
- Stir in the shredded cheese until melted.
- Garnish with chopped cilantro before serving.
