- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1–2 tablespoons chili paste (adjust to taste)
- 4 cups chicken broth
- 1 cup bell peppers, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onion, garlic, and ginger, cooking until fragrant.
- Add the chili paste and bell peppers, mixing well.
- Pour in the chicken broth and bring to a boil.
- Add the orzo pasta and reduce heat to a simmer.
- Cook until the orzo is tender and the liquid is mostly absorbed, about 10-12 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
- For a milder dish, reduce the amount of chili paste.
- Feel free to add other vegetables like spinach or zucchini.
- This dish can be made ahead and reheated for leftovers.
